Mutton biryani is a
very delicious biryani recipe that is most famous in Arabian countries.

Ingredients
· 2 cups basmati rice
1 kilogram’s mutton
1/2 cup fresh cream
2 green cardamom
· 4 red chili
1/2 cup ghee
2 teaspoon cumin
1 bay leaf
· 1 tablespoon ginger paste
1 tablespoon garlic paste
1/2 cup raisins
1/2 cup cashews
1/4 cup milk
1 teaspoon gram masala
powder
1 cinnamon stick
2 dashes of saffron
How to make mutton Biryani?
· Wash the mutton thoroughly. Then drain the water when you wash
the mutton completely. Make sure you squash out the excess water and perforate
the meat using a divergence.

Pickle the mutton. Now,
add all the marination ingredients to it. With the help of your fingers, rub
well so that the marination spreads consistently. You should leave this meat in
the refrigerator overnight. If you want to cook this recipe suddenly marinate
and keep aside for about 1-2 hours.

Heat the ghee in a Pot and boil the rice. Temporarily, parboil the rice and keep it aside after spreading it
on a plate. It will turn sticky when mixed with the mutton if you do overcook
it. Dissolve the saffron in ¼ cup milk and set aside. Heat some ghee in a pot
and fry the cashews and the raisins.

Fry the onions. Slice
the onions and fry them in the same ghee until they will change color. Reserve
half of the onions and keep them aside. Remove the mutton from the refrigerator
and allow it to come down to room temperature for a few minutes. This step is
very important to make a delicious recipe. Heat ghee in a deep-bottomed vessel.
It should have a tight-fitting lid.

Cook the marinated meat. Once the ghee is sufficiently hot, add the whole
spices-cinnamon, cumin, bay leaf, and cardamoms. Keep them choking. Add whole
red chilies and marinate the mutton cut pieces. Add the ginger, onions, and
garlic paste and cook covered till the mutton is warm.

Layer the rice and mutton. Now add gram masala and roast the mutton till the oil separates
from it and the entire water is absorbed. In the same pan add a layer of cooked
rice, followed by a layer of mutton, and then again a layer of rice.

Let the biryani cook for about 10-12 minutes. The topmost layer should be rice. Now add the milk and cream.
Cover the topmost and cook on low flame for about 10-12 minutes.

Garnish and serve. Remove from flame and garnish
with onions, mint, kasoori methi, and coriander. Now enjoy this delicious
mutton recipe and serve hot with raita or with your favorite chutney.
